The Start of Sweet Corn Season in Michigan

We had our first batch of Michigan sweet corn. It was great! You can see my preferred method of butter application too.

This batch was cooked in water for about 10 minutes. Allowed to cool a bit and rolled on a stick of butter and lightly salted. Enjoy! See this and more at ChefBenwa.com

I often roast them over open flame and serve them with a good rub of lemon juice and kosher salt...... that's lovely too... Corn on the cob is served just this way on the street stalls in India, when fresh corn is in season..like it is now! :)

Our local sweet Brentwood corn is in full production-love it roasted in the husks on the grill. I usually add some butter, olkive oil and fresh herbs, pull the husks back up and roast. Another yummy way is butter and masala. Secret to sweet corn-buy fresh picked corn, cool down in ice water for 3o minutes, grill. This process keeps the brix up and stops starch from forming! Here they even pack the corn in ice in the fields when picking.
