Summer dinner

Once the summer starts it seems like it is time to do everything you have been waiting for. Winter just seems so long and Spring just makes me think, THATS IT. I am not going to take it anymore.

The variety of fruits and veggies changes at the supermarket. The produce is in plenty and the colors are bright. I will like eating there itslef. Honestly, I don't feel like cooking an elaborate dinner for summer. I like to keep it simple and as freash as possible. Being a vegetarian I of course lots of veggies in my cooking. But in the summer especially I love to use the produce as an experiment. Many a salad recipe has been created for summer. Winter is more for lentils and beans. Summer is from tasty wraps, yummy salads.

Food that you can eat out on the patio. One that does not require heating and reheating. Some of my favorite summer recipes are):--

These are some of summer's must try. They are fast and easy. Not requiring much cooking or reheating. Perfect to enjoy the outdoors while you can.

thank you for posting this shakti!  :)  i'm going to try the recpies!! i was a vegetarian for many, many years, but i LOVE all food now.  :D  however, i totoally agree with what you said about summer time cooking, something light & fresh is wonderful during the hot days.  :)
