Tomato Sugo

Sugo di pomodoro is a conventional sauce, coarse in texture. In fact, it can be called basically a slow-roasted tomato sauce. Although there are many types of tomato sauce available -- varying from a liquid tomato puree to a hearty tomato stew -- a sugo usually falls somewhere in between. By gradually cooking the tomatoes with seasonings and aromatics, you create a rich, flavorful sauce that enhances the natural flavors within the tomato. Loaded with vitamins C, A, B, and potassium, iron, fiber, and phosphorus, tomato sugo is a healthy addition to any meal.

 

 

Vegetable Sugo

 

This is a great dish to make for friends and family as it is full of flavor thanks to the number of vegetables and spices that go in it. You can use veggies like leek, fennel, carrots, tomatoes, and zucchini to make this vegetable sugo. The ingredients should be as fresh as possible so that the nutritive value and the quality of your dish are as high as possible. Don’t forget to season your sugo, Add salt, soup seasoning, basil, marjoram, oregano, and a little bit of ground pepper and  then Crème fraîche. Ready!

This dish does indeed taste as wonderful as it sounds. If you really want to make this as fresh as possible, you could attempt making the gnocchi at home as well; otherwise, the store bought variety will do just fine. Instead of the wild mushrooms, you can even use baby bella, morel, or button mushrooms, which ever you prefer. The flavors get deep and rich, but they don't take much time to make at all. This dish pairs exceptionally well with a glass of Merlot.

When paired with a delicious sugo, this dish is guaranteed to make people come back for a second helping. Make sure you make a generous amount of sugo as you can use the excess to use with pasta or simply save it for another meal. Stir in some basil into the sugo once prepared for some added flavor.
