This dish makes for a great appetizer. Serve with nachos or some cut up veggies. It’s a little high on calories so be careful not to go overboard with it. Your guests are going to love this hot, creamy, cheesy food. Make it in large quantity as it is to be a sure hit at any event.

 

Chicken Curry with Spinach

Chicken curry with spinach is akin to a traditional Indian dish called Chicken Saag. It's a scrumptious dish bursting with flavor and spices. It also packs in protein and vegetable into one single dish which makes it quite a wholesome meal. You can eat this with some naan bread or basmati rice.

The basic spinach salad remains a favorite, with updated adaptations adding "specialty" mushrooms and cauliflower or sliced fruit and poppy seeds. The key to making any version is to use fresh, young, tender spinach leaves. Add bacon and egg slices to the salad to make it more filling.

 

Creamed Spinach 

Despite its status as an iron powerhouse, spinach's main nutritional benefit comes from its high vitamin A concentration, not its average iron supply. The leafy vegetable's simple taste goes well with a cream sauce. One standard recipe starts from a roux -- a flour and butter concoction -- and tastes as savory as its ingredient list sounds. Other adaptations skip the butter, but still present that creamy taste and silky texture that makes creamed spinach a much loved comfort food.

Lentils with Spinach

This is another great entrée. You can use the split chickpeas lentil to make this dish. Soaking the lentils a couple of hours before cooking help speed up the process. The spinach can be sautéed separately and added to the lentils after they are pressured or cooked along with. You can temper this dish with some clarified butter, cumin and paprika. It goes really well with rice.
