This is great. Good to have a list. Often my friend from Chennai is found pronouncing "In India we have this..(veggie, spice, ....)" to his american wife " it is called .....". He of course means in Chennai. His poor wife is at a loss when she tires to look up the item in cook books. At times we his friends are not of much help, all coming from different states.
Some terms in Hindi/Urdu:
Cracked wheat is called Dhalia,
Coriander is called Hara Dhania in North India and Kothmir in South India.
Rice Flour would be Chaval Ka Atta.
Buttermilk is Chanch as Farah said.
Saffron is called Zaffraan in Southern India.
Jaggery/Gud/ should should not be confused by Guth which is Bone Marrow. (believe me this is happened!)
Sugar/shakkar is also called Cheeni mostly in North India.
The Delhi Govt fell on the price of Onions ie Payaz or Khandha(mostly in Central India).
Garbanzo Beans is specifically referred to Kabuli Channa, Channa being generic term for a type peas.
Which brings us to green Peas ie Mutter.
