Working on a Rhubarb menu? Rhubarb has just a wee bit of natural sweetness so there is no reason to restrict their use to dessert. Rather you can take their lemony flavor and push it in another direction entirely. Here are some fantastic rhubarb menu ideas.

 

 

 

 

 

 

 

Rhubarb Pie

Any rhubarb menu would be incomplete without a rhubarb pie. Make a Rhubarb Pie! Rhubarb, a flavorful member of the buckwheat family, is an excellent source of vitamin C and tastes great in a pie. It will grow almost anywhere, and can be made into jam, sauce or syrup. It will keep in the refrigerator for weeks, or stored frozen for months for later use.

Rhubarb Wine 

Rhubarb is a part of the Rheum genus which has about 60 species. The most frequent choices for human consumption, including wine, are the garden rhubarb and false rhubarb which is actually true rhubarb. Rhubarb wine may be made pure and is a great blending wine. Just in case you were wondering, rhubarb wine does not need to age.

Rhubarb Chicken 

Rhubarb is much loved in Sweden, and you'll find it in many gardens. It's usually eaten as a dessert, almost always in the form of a crumble (or prepared into cordial). Still, rhubarb can definitely be used in food as well. This dish calls for full-fat cream, but you can use something else if your diet is less tolerant. You will need some Sambal oelek which is a spicy chili paste but regular chopped chilies are just fine as a substitute.

 

 

Cod in Rhubarb Sauce

 

This is a great recipe as you can make the rhubarb sauce ahead of time and store it in the refrigerator. When you're ready to broil the cod fillets, just reheat the sauce over low heat until it's hot. It tastes great and is very healthy and therefore ideal to serve your kids, friends and family. It’s pretty easy to prepare and doesn’t require much slaving in the kitchen.

 

 

Rhubarb Bread

 

You can easily find rhubarb at the local farmer’s market or perhaps even the neighbor’s backyards.  This rhubarb bread is both sweet and nutty and a delight to make in the springtime. Make sure you make at least two loaves, one perfect for eating warm with butter and another to save or share.  It also makes the ideal snack in between trips to the garden!
