Cauliflower latkes are quite easier to make and are low in carbs than the traditional Jewish latkes. You can add steamed broccolis to the batter to make more nutritious latkes. Living upto its name other than cauliflower you will need eggs, salt, all-purpose flour, and olive oil to make this latke. If you are combining the broccolis, then you need to double up the quantity of the ingredients.

     

  2. Pumpkin Latkes: Have you ever imagined that pumpkins can be used to prepare a Jewish latke? Pumpkin is basically a winter vegetable and Sephardic Jews use it widely in preparation of different kosher recipes. Yes, you have heard it right, cottage cheese when combined with eggs, milk, matzo meal, sugar, salt, and ground cinnamon and canola oil gives out great taste.  All the ingredients used in the preparation of this latke are kosher, so these latkes can be considered as kosher for Passover.
