Haling from Australia, this famous dessert is named after the Russian ballerina Anna Pavlov a. It consists of a crisp meringue base topped with whipped cream and fruit such as straw-berries, passion fruit and kiwi. A Pavlov a is usually served with fruit sauce or additional whipped cream.

Since the Pavlova is a tribute to the great Russian Ballerina, Ann Pavlova (1885-1931), it should therefore be presented in the form of a curvaceous dancing figure. Also Pavlova is crispy and fragile and tends to break easily, hence its advised to decorate the Pavlova just before serving.
