Paula Deans Calling me out

Hey Guys, i have been placed in foodnetworks queen paula Deans top 8 on her friends list, with this honor comes with a challenge, as one of her top 8 i have to prepare a dish either one of hers or my own, take a picture of it and sned it to her on myspace and she will post it on her profile page.

this is where you guys can help, shoot me some ideas or recipes and along with mine, paulas and yours ill fix it and send the pic to her with the name of the cook or chef who's recipe i pick.

Paula's a southern gal so i wanna give her some good ol comfort food, i plan on fixing her collard greens, my smoke beer butt chicken and whoever elses recipe that gets chosen.

if your up for the challenge shoot me some ideas or recipes, and i'll gladly mention you on the pic i send.

this should be fun, i have until november 15th to submit cause she picks a different person each month. thanks and good luck

Looks like you got the greens, a main dish of chicken. How abt dessert? A Sweet Potato Spice cake would be a very authentic southern comfort food. (And we all know that Paula really likes desserts. )

Know you have chicken but dang my grandmother's recipe for chicken and dumplings or stewed tomatoes and dumplings might ring the bell. Grandmaw was from S. Ohio (18 miles from Maysville, KY), in fact never left her county. Her forefathers were the first white settlers in the Ohio Valley coming over from Plymouth in the 1600's. Oh or her Butter Pie, now that is old classic and amazing - everyone tastes it and goes crazy. ever had one like it ever anywhere else. Love the wording on the recipe olde Colonial ways. Butter Pie is a recipe of the colonies! Most likely passed down from the UK forefathers-amazing and rich. I often make it for the holidays, although our daughter is THE baker-must be all the time she spent/spends in France. Shanti/Mary-Anne

Butter rich custard pie. I'll dig out the recipe if interested. I haven't made it in a couple of years as daughter has become the family baker. We only do desserts at Christmas and Thanksgiving. Shanti/Mary-Anne

If you are making greens you must serve cornbread as well. It may actually be a law. Real Southern cornbread has no sugar in it. Here is a time honored recipe for Cracklin' Cornbread: 1/4 cup butter 2 cups self-rising cornmeal 1/2 cup all-purpose flour 2 1/2 cups buttermilk 2 large eggs, lightly beaten 1 cup cracklings (fried pieces of pork fat also called chicaronnes in Mexican cooking) Place butter in a 9-inch cast iron skillet, and heat in a 425 degree oven 4 minutes. Combine cornmeal and flour in a large bowl; make a well in the center of the mixture. Stir together eggs, buttermilk and cracklings; add to dry ingredients, stirring just until moistened. Pour over melted butter in hot skillet. Bake at 425 degrees for 25 to 30 minutes or until golden brown. Yield 8 to 10 servings.
