This campaign has caught on like wild fire with health-conscious individuals beginning to relish this day.

Vegetarian Moussaka

In the meatless version of this Greek dish, you can use barley instead of meat. Barley would not only keep you off meat for a day but will also build the flavour of the dish.

This easy vegetarian recipe makes a filling dish, which has the protein-rich quinoa. You can use it as a side dish or a main dish both.

 

Fruited Tabbouleh

This is another version of the Middle Eastern wheat salad, where fresh fruits like plums, apricots and nectarines and juicy tomatoes come together to make a perfect summer treat.
