The Meatless Monday fever has caught on big time in the US, as a result of which there is much awareness among Americans about how to rustle up a meal for their personal Meatless Mondays. Sqaush-blossom quesadillas

Green Energy Salad 
After having spent the weekend in a blur, we all want some good dose of energy to pep up ourselves for the busy weekdays ahead. What better than the green energy salad, packed with the goodness of fibrous kidney beans, which also supply protein and Vitamin C. Add to that the sweet corn - which aids in digestion, green peas – high-fiber, soy beans – a rich source of essential amino acids, spring onions – a super food with good iron-absorption ability; radish – an anti-inflammatory vegetable, which boosts muscle recovery, and rocket – a good source of folic acid. What’s more, you can easily carry this nutrient rich salad to office too.
Pasta with wild mushrooms
Some of us just can’t do with our dose of the Italian food but since meat is not an option, you can replace the usual meat in your pasta dish with wild mushrooms, which bring a zing to your Meatless Monday Lunch. This dish is made with shiitake mushroom, any long pasta, fettucine and vegetable stock.
Chickpea power lunch salad
A simple meal made with chickpeas, green beans, spring onion, red capsicum, watercress, and chopped walnuts. Boost your energy levels with this lunch idea and what’s more, you save on time too.
