Juniper berry These astringent blue-black berries are native to both Europe and America. Juniper berries are too bitter to eat raw and are usually sold dried and used to flavor meats , sauces, stuffing , etc. they’re generally crushed before use to release their flavor. These pungent berries are the hallmark flavoring of GIN. In fact , the name is derived from the French word for juniper berry-genievre, which is the name for gin in France.

Juniper berries are a must when marinading game! We fix wild boar, venison and such with a red wine, onions, garlic, and juniper berry marinade for a couple of days as it lessens the gaminess that some object to in flavour.

No, this sounds wonderful-can you share the rcipe please. My mom's friend that hunts just gave her vnison and wild boar that she is sharing with us and I'd love to make this soup.
