The preparation of Prince William wedding with Kate Middleton is in full swing and there seems to be an Indian connection this royal wedding! Fiona Cairns who has taken the charge of making the wedding cake for this Prince William’s marriage is the wife of Gujarati Indian, Kishore Patel.

As according to Fiona Cairns, it was Kishore, her husband, who motivated her to switch to luxury baking from graphic designing. Initially, Cairns did baking at home and made cakes for birthday parties and wedding ceremonies of friends and relatives. But today, she has a state of art bakery, has 90 people in her team and the cakes of her bakery are supplied to Fortnum and Mason, Selfridges, Sainsbury's Waitrose and Harrods.

Cairns modestly admits that, had her husband not encouraged to take up this line, she probably would not have been a renowned baker and would have missed the chance of making cake for this royal wedding of Kate Middleton and Prince William. Fiona calls this opportunity her dream project and is ambitious & excited about it. She gives the entire credit to Kishore Patel for realizing her potential and encouraging her to form Fiona Cairns Baking Company. Patel gave up his design practice at London and joined the wife’s business and today they both have successfully made it a company with net profits of $8 million.

Kishore Patel, who was born in Uganda and moved to UK recalls that the baking started on the kitchen table and once we realized we could take this ahead we worked on it and made it a luxury brand. He also opined being in love with Indian stuff and hoped to diversify his baking business to India, once he gets a suitable partner. It was also disclosed that Patel and Fiona spend two good months in India every year in Vadodara where they have a house.

Patel excitedly shared that Fiona tries a lot of Indian colors and patterns in her baking items; in Patel’s own words,  “We have even done special cakes for Diwali!"

The couple is really looking forward to the final day and is working hard to make it big.
