Would you like to try eating some human cheese? This is a question that succeeds in disgusting people except the most adventurous. The very idea of consuming human cheese makes us uneasy as we imagine a woman at the end of it all who serves as a source for the milk. However, with terms like sustainability and organic forms of food gaining popularity the day that opens with the cheery thought of here comes human cheese should not be too far into the future either. While the human cheese breaks food barriers, the notion also shocks and pleases everyone and none can really be indifferent to it.

Miriam Simun, a graduate student at the New York University is behind the human cheese project which was developed as a part of her course studies. She now plans to educate the people on biotechnology, human body and the food systems which will make them appreciate it when she says, “here comes human cheese”.

The inspiration behind this unique project had been her love for cheese reveals Simun. Having to battle with a horde of choices that offer sustainable, organic, ethical or fair trade products seemed to be too much of a trouble which set her thinking about the most natural and ethical cheese possible. The result was the proclamation which stated here comes human cheese.

While most people are shocked out of their wits on learning about the human cheese others have a number of queries which range from inquiring about it being Vegan to those concerning moral and legal issues.

Simun explains how she obtains the milk from two different women who sell their excess breast milk online. She reveals how she is currently engaged in making a delicious variety of Cheddar human cheese from the milk obtained from the woman residing in Wisconsin. She also hopes to work with more women from New York who would help in her endeavor of making the human cheese.

While the idea behind the human cheese is certainly interesting with the human milk being the most natural food that we have all consumed as babies, the topic still remains debatable. The ethics and morality issue also needs to be looked into especially if it gets to be produced on a large scale. Miriam, however, hopes to create a niche market with her healthy if some what strange product, the human cheese.
