How to make Fresh Pasta?

For those who love cooking like me, making pasta from scratch is an enjoyable challenge. Of course things can get messy but the satisfaction of cooking self made fresh pasta is simply incomparable. Not only are they fresh but they are tastier too! When you have time at hand you should try to make some pasta from scratch! Here is how to make fresh pasta from scratch:

 

How to make pasta

 

Ingredients required to serve 3

 

a. 350 g of Tipo ‘00’ flour  - The Tipo ‘00’ flour is an Italian pasta flour. The ratio is 100gms of flour per person.

b. 3 medium free-range eggs

c. 1 egg per 100 gm of flour

d.5 liter water

e. 3 tsp salt

f. Olive oil

 

Step 1

 

Mixing the Dough for Fresh Pasta

 

Pour the flour on flat wooden surface and make a well in the centre of the flour mound. Crack all three eggs and pour them into the well in the centre. Using a blunt knife mix the flour into the eggs gently. Keep moving the mixture until a soft doughy texture is achieved

 

Step 2

 

Kneading the Dough for Fresh Pasta

 

When the mixture gets too thick for the knife use a pastry scraper or slowly start kneading with your fingers. Sweep the remaining flour into a container and then sieve it to isolate the doughy crumbs. Use the left over flour to continue kneading. Stop kneading when the dough rises back after you push it down with your fingers.

 


Step 3


Flour the dough ball a little and place it under an up turned bowl and leave it to rest for almost 20 min.

 

Step 4

 

Rolling out your Pasta Dough

 

Rolling the pasta dough out is the tricky part. Dust your rolling pin and work surface. Flatten the dough ball with your palm and then roll it out. Whenever the rolling pin sticks dust it with flour. Take care to roll the dough into a thin, circular shape that is not torn. If the dough becomes too large and thin, roll it on to the rolling pin and then turn it over and roll it out.

 

You can also divide the dough into three equal shaped balls and then do the rolling to make things easier. Using a pasta machine for rolling and eventually cutting the dough is also a good idea. Step 5

 

Making the Pasta

 

Fold the sides of the rolled out pasta dough from both sides (5 inch width) until they reach the middle. Then slice the pasta across the folds (two inch thickness). Slide the knife underneath the cut pasta sheet and lift. The pasta will unfurl.

 

Step 6

 

Preparing the pasta

 

Take a large vessel. Add the salt and a few drops of oil to the water and boil it. Remember the thicker the pasta the longer it will take to cook. Once the pasta has been cooked pour the water and pasta through a colander. Add some olive oil to the pasta and mix. Check out for some tips regarding cooking pasta here.

Serving the pasta

Hey, I've been making a lot of pasta myself lately, and I can only agree that it's so much better than the ones bought off-the-shelf, but it's definitely something for the weekend because of the big time commitment that comes with it! I actually use a mix of plain flour and Semolina, which I think makes a much nicer texture, and is also a lot better for catching the sauce later. And I definitely recommend to buy yourself a small pasta machine, they're usually only $30 bucks, and it really saves you a ton of work :-)
