Eggs can be stored in egg trays without refrigeration for almost one month and even more. Eggs contain a natural coating that protects them from air and bacteria. They must not be washed or come in contact of water or any liquid or solid material that damage its surface.

Storing eggs in a refrigerator is the most common practice.  Eggs are bought from supermarkets or grocery stores in packs which come along with the details of their expiry date and day of packing which range between 1 and 365 in a year since the egg has been fresh.

Good quality eggs must be chosen. Good eggs when placed in a bowl of water sink, while the stale ones float. Another way of testing it is by checking the rounded end of the egg for air bubble. A fresh egg contains small air bubble at the rounded end.

Eggs must be placed in the coldest region of a refrigerator. They must be placed along with their original carton boxes with their round ends facing up. They must be kept away from strong odours. When needed for cooking, they must be taken out early enough so that the eggs attain room temperature before cooking.

Eggs last up to three months in a refrigerator.  The catch lies in storing them properly.
