Gas Smoker: You can set the temperature of the gas smoker at 225 degreesF. Put 2 cups of soaked wood chips in the smoker box.Allow the chips to smoke before you keep the pork chops on the smoker.
Putting the pork chops: After 5 hours of soaking the pork chops in the brine mixture, you can keep the pork chops on the smoker. Always keep the pork chops in indirect heat. It will take time for the pork chops to cook at low heat.
Water: You can add water to the water pan in order to keep the pork chops moist while they are cooking in the gas smoker.
Smoking: Close the smoker's lid and smoke the pork chops until they reach a temperature of 160degreesF.Generally pork chops take around 4-5 hours for cooking in a smoker.
Removing: Remove the pork chops from the smoker once they are fully done.
