How To Reduce Sugar While Baking

While baking cakes and confectionaries we often think how to reduce sugar from the baked food. Reducing sugar from baked food is not that easy because inadequate sugar hampers baking process. To bring down amount of sugar we certainly cannot compromise on  taste. Hence  learn the tricks to bake dishes with less amount of sugar.       Some Tips to Reduce Sugar While Baking
  • Cut off  Bit by Bit
This rule goes with French rule. It is said, French chefs use half the amount of sugar than it is suggested for a recipe. The flavor and slow baking process adds to the taste of the baked item. If we cannot reduce sugar to its half quantity, we can certainly try to reduce  3/4th amount and slowly we can increase the cut off.
  • Using Sugar Substitute
Sometimes reducing sugar may not serve the actual purpose because some baked foods tastes bad with low sugar taste. In these cases you can use some quality sugar substitutes. The use of these sugar substitutes will help in retaining great taste while they will reduce negative impacts of sugar. Some healthy sugar substitutes are:
  • Honey
  • Rice or maple syrup
  • Unsweetened fruit purees for moderate use as these contain fructose
  • Spices like cinnamon, mixed spice, nutmeg
  • Fresh berries and sweet vegetables
  • Use of artificial sweeteners
  • Increase Flour Quantity
This is a tricky way and you need to do experiment because sometime it may not work. It is better to try this flour increase process for small volumes.  
  • Reducing Sugar by Adding Yeast
It is great process and easy too however the trick demands experience. Once you learn to identify the actual requirement of sugar for the activation of yeast, you have hit the bull’s eye. Before that trial and error method will be the best policy.
  • Tenderization
Try to make the dough soft and tender. Tender dough holds better amount of moisture and is easy to spread. Instead of brown sugar or powdered sugar, granulated sugar will be a better use because it supports easy spread of dough. You can try adding a pinch of baking soda in the dough.
