Things Required

Fresh Ginger Root (preferably young root)

Rice Vinegar (3 cups)

Sugar (2 cups)

Salt (2 cups)

Method for Pickling Ginger

  • Wash the ginger root thoroughly and rub off the skin. You can peel the skin using a vegetable peeler.
  • Now cut the ginger into thin slices (1/8inch) using a sharp knife or a mandolin slicer.
  • Place the sliced ginger in a bowl and add salt. Let the salt-ginger mixture stand in the bowl for 1 hour.
  • Meanwhile in a large pan, boil rice vinegar and sugar. Stir till the sugar dissolves and then remove from the heat.
  • Dry the ginger slices with a paper towel and put them in a container/ jar with a lid.
  • Pour the hot mixture of rice vinegar and sugar on the ginger slices placed in the container. Screw the lid onto the jar.
  • Shake the container and let it cool down.
  • If the ginger used is fresh and young it will change the color to pink.
  • Place the ginger pickle jar in the refrigerator and enjoy with your favorite sushi.

Pickled ginger stays well for about a month in the refrigerator. Make sure not to use wet spoons/forks to take out pickle from the jar, to keep it from spoiling. Enjoy the home made ginger pickle with sushi, grilled fish, couscous and with sandwiches.
