How to pickle eggs
Pickled eggs are hard boiled eggs that have
been peeled and stored in a solution of vinegar, salt and different spice
blends and preserved for weeks or sometimes even several months. It is a
popular side dish, and can be served as hors d'œuvres, garnishes, or as an
accompaniment with alcohol. High in protein and low in carbohydrates, pickled
eggs are an ideal snack for weight watchers and diabetic people.
Varieties
of pickled eggs:
Traditional pickled eggs consist
of hard boiled eggs pickled in a solution of brine, vinegar, salt and pickling
spices. The pickling spices are the determinants for the final taste of the
egg.
One variant in Pennsylvanian Dutch country,
are the popular red beet eggs, which use beets in the pickling solution to
impart a deep red color to the pickled eggs.
Spicy pickled eggs, preserved with Jalapeno
peppers, are hugely popular in Michigan.
Pickled eggs are served in different ways.
In bars, they are usually kept in large jars, can be taken in a napkin, on a plate,
on a cocktail stick, or with chips. Pickled eggs can be served in picnics, with
a green salad in a sandwich, with cold meat, in a potato salad, or with fish
and chips, like the British do. Like pickled onions, pickled eggs are an
acquired taste, and can take a while to get used to.
Methods
of pickling eggs:
Although the varieties of pickled
eggs are vast, most of the recipes will include the use of malt or cider
vinegar. Spices that are used in pickling include garlic, ginger, cinnamon,
cloves and pepper. If you do not have these spices handy, opt for a readymade
pickling solution that is available in most stores.
Here is a recipe for easy pickled eggs:
Ingredients
12 hard-cooked eggs
1 tsp. whole cloves
1 tbsp. sliced gingerroot
1 tsp. peppercorns
3 c. cider vinegar
1 1/2c. water
1 1/2 tsp. Salt
How
to make Pickled Eggs
Place eggs in large screw-top jar.
Tie cloves, ginger- root and peppercorns in
small cloth bag.
Combine vinegar, water and salt in
saucepan; add spice bag.
Bring to a boil; cook for 10 minutes.
Remove spice bag; chill vinegar mixture.
Pour vinegar mixture over eggs; seal jar.
Let stand for 2 days before serving.
