How to make smoked salmon
Step 1: At the base of a stovetop smoker place the water-soaked wood chips. You can place a double layer of aluminum foil in the bottom of a wok or together with charcoal briquets in the bottom of a charcoal grill with a cover.
Step 2: Rinse thoroughly the salmon and pat dry. Sprinkle with salt and pepper.
Step 3: Place the fish at the top a wire rack and set aside.
Step 4: Always make sure that your smoking apparatus is in a well-ventilated area.
Step 5: Next, heat the smoker according to the directions provided in the manual. In case you are using a wok or grill, heat the wood chips at a high temperature till they start to smoke furiously.
Step 6: Place the rack with the salmon above the wood chips in the smoker, wok or grill. Next, seal the wok tightly.
Step 7: Smoke salmon for about 15 to 20 minutes till it’s done and enjoy!
