In this particular sushi rice recipe, you will need 3 cups of Japanese rice (short grain rice), half a cup of rice vinegar, three 1/3 cups of water, a teaspoon of salt and a quarter cup of sugar. As for the cookware, you will need a large sized pot with a lid, a large sized shallow bowl and one wooden spoon.

Visit a nearby Asian grocery store and purchase the short grained Japanese rice. Do not buy the instant rice varieties or the long grain rice, as only the short grained rice is most suitable for making sushi.

Wash and soak rice

Rinse the short grained Japanese rice in clear water and then, soak the rice in water for some time. You need to rinse the rice thoroughly by washing the grains in the water several times. This will rid the rice from its starch and will strengthen its gluten to make the rice sticky easily, which is much needed for this recipe. As for soaking the rice, choose a large pot and fill it with water. Soak the rice in it for 20 minutes to half an hour.                                                                                                                                                                                                                                               

Make rice vinegar

While the rice is soaking in the water, you can get busy with the preparation of the rice vinegar required for this recipe. To do that, mix rice vinegar, sugar and salt in a small sized pot. Then, warm the mixture as you keep stirring it constantly. Make sure, you stop heating the mixture just before it starts boiling. Warm the mixture just enough to blend all its ingredients completely.                                                                                                                                                                         

Cook the sushi rice

By now, the rice must have soaked enough. So, it’s time to cook it now. To do that, just place the rice pot on the stove keeping the water inside it. Now, cover the rice pot with the lid and keep it covered while the rice cooks. When you can hear the water in the pot boiling, lower the heat and let the rice simmer in the boiling water for 15 minutes. After that, remove the pot from the heat and allow the rice to stand for some 10 to 15 minutes at room temperature.                                                                                                                                                                                           

Add the vinegar

Add the vinegar to the rice as it cools down a little. Stir the rice with a wooden spoon and drain the cooked rice in a large sized wooden bowl.
