How To Make High-Gluten Flour At Home
Gluten is a protein found abundantly in the endosperm of wheat. It is of immense importance in making breads or pizzas because it makes them spongy and fluffy. Although there are many types of gluten flour, people love to use high-gluten flour. High-gluten flour is a regular white or wheat flour with additional gluten added. It is also known as a bread machine flour. High-gluten flour is treated so as to have proportionately more protein content and less amount of starch. So high-gluten flour is generally preferred by people who want to make low-calorie loaf of bread. The protein content in this type of flour is around 12% and it holds 54 grams of carbs per cup. High-gluten flour adds stickiness and sponginess to dough. This is the reason why making high gluten flour results into much lighter and fluffier bread.
Making high-gluten flour white loaf at home is very easy. It involves simple steps and your end product turns out to be good if you are using rapid bake cycle. You need 3¼ cups bread machine flour, 2 tablespoon non-fat dry milk, 1 teaspoon salt, 2 tablespoon butter and 2 tablespoon granulated white sugar. ¼ cup instant mashed potato flakes will add another touch of softness in your loaf. Also keep by your side 1 cup water and 1½ teaspoon active dry yeast.
To start with, take a bread machine pan and add all the dry ingredients mentioned above. The quantity of the ingredients should be carefully measured. You should be exactly adding 3¼ cups bread flour, 2 tablespoon non-fat dry milk, 2 tablespoon granulated white sugar, 1 teaspoon salt and ¼ cup instant mashed potato flakes into the bread machine pan. Once you are over with this, you need to add 1 cup of water and 2 tablespoon butter into the bread machine pan.
Now lid the bread machine and add 1½ teaspoon active dry yeast to the yeast dispenser. For better result set the bread machine to the rapid bake cycle and start your bread machine. Once your machine completes the rapid bake cycle, remove the bread from it and allow the bread to cool for one hour before you slice it.
