Fresh homemade goat cheeseThe most interesting fact about goat cheese is that you can serve this with anything to your kids and other family members. The process of making goat cheese is almost similar like preparing cottage cheese at home, but you have to pay more attention at some particular stages of the procedure.

First of all you will need fresh goat milk, which is available at most of the grocery stores. If you can find a goat firm near your place, then you can collect the milk from them also. The second most important ingredient is freshly squeezed lemon juice. Other than these, you can add garlic, salt and any herbs, according to your choice. You will also require two most important instruments for the preparation; one is a cheese cloth and second is a candy thermometer.

Process of Goat Cheese Making

  • Take a medium saucepan to fill with goat’s milk and put it over the stovetop on medium heat. Use the thermometer to check the temperature of the milk. Wait for 10-15 minutes till the temperature reaches 180F and then remove the saucepan from heat.
  • After removing the saucepan from the heat, pour the lemon juice into the milk. Stir the lemon juice inside the milk for few times. The milk will start to get curdled within moments. If you see nothing is happening then add few more drops of lemon juice to the milk and stir properly. The curdling of the milk can be noticed, but it is not going to be same as it happens for cottage cheese.
  • Now take a colander to cover with cheese cloth. But you should know that one layer of cheese cloth will not be sufficient. Use several layers of them, so that no cheesy milk gets strained through the cloth. Gradually pour the milk over the colander.
  • Allow the majority part of the whey to drain away. When the whey comes to dripping stage, then pull the four corners of the cheese cloth upwards and tie all together. Make this thing hang over a deep bowl from any hook on the kitchen wall or handle of the kitchen door. The dripping will continue as long as the cheese is not completely free from whey. Best would be to keep it hanging for night, so that in the morning your fresh and soft goat cheese gets ready.
  • In the morning, shift the cheese from the cheese cloth to a large bowl and add your favorite flavors along with the garlic and salt. Now your goat cheese is ready for the breakfast. Use this to serve on breads, sandwiches, salads, fruits and anything of your choice. You can also store this in an airtight container inside the refrigerator. But to enjoy the freshness, finish it within 2-3 days.
