What You Need:
1 whole chicken, cleaned with the innards removed
Salt and pepper
3 cloves garlic minced
1 tablespoon fresh rosemary, finely diced
1 lemon
2 teaspoons diced fresh thyme
3 tablespoons olive oil
1 medium onion
Step 1: Wash the chicken under running water and dry it with paper towels or just let it sit till the water drains away.
Step 2: Place a basting pan beneath the rotisserie on the grill and light the rotisserie.
Step 3: Take the rotisserie skewer and pierce the chicken. Insert the skewer just below the neck and bring it out between the thighs. Tightly attach the cages.
Step 4: Take the lemon, a sprig of rosemary and the onion and stuff the chicken. Brush the chicken surface with olive oil.
Step 5: Now it’s time to make the salt rub. Take a bowl, add the salt, pepper, the remaining herbs and the garlic and mix them together.
Step 6: Coat the chicken generously with this rub.
Step 7: Tie the chicken’s legs and thighs firmly to ensure that the chicken does not come undone while it is rotating.
Step 8: Roast the chicken till the thermometer reads 160 degrees Fahrenheit. This should take about 2 hours.
Step 9: Turn the heat off, close the lid and let the rotisserie continue turning till the temperature reached 170 degrees.
Step 10: Remove the chicken from the grill, cover it with foil and let it stand for 15 minutes for the juices to sink in.
Now that you have successfully grilled chicken on the rotisserie, bring out your carving knife and indulge!
