Tips to Prevent Cracks in a baked cheese cake
- The most common reason for cracks in a baked cheese cake is because it is overbaked. Check the cake about 10-15 minutes before the recipe bake time. If is it set but still jiggles a bit, it means it is done.
- Do not bake in a very hot oven. Bake the cake at a lower temperature and for a longer time.
- Bake your cheese cake in a cake tin covered with foil on all sides and placed in a hot water bath. Remove your cake tin from the bath after removing from the over.
- Cheese cake is baked custard and hence rapid cooling will cause it to collapse and crack. Cool the cake on a rack or near the oven or a warmer place and cover it with a damp cloth soaked in the water bath water.
- Even after following at these preventive measures, if your cake still cracks, try adding corn flour or flour to your cheese cake batter.
If your cheese cake still cracks, then use these tips for fixing a cracked cheesecake.
- Cover it up – You can just cover the cracks by using topping, glazes, sauce or fruits after the cake is chilled. Use chocolate or caramel sauce, use a fruit jam or coulis flavored with liqueur to glaze the cake or spread some lemon cream or custard. Garnish with fruits and no one will notice the cracks.
- Slice the cake before serving it – No one will know there were cracks.
- Use a Pallet knife and smooth away the cracks – After your cake cools, use a flat, warmed knife (dip knife in warm water) to fix a cracked cheesecake. Smooth the cracks with the pallet knife.
