How to Eat Andouillette?
Andouillette is a coarse-grained smoked tripe sausage that is usually made of pork and chitterlings and seasoned with pepper, wine, onions, etc. There are different versions of Andouillette – they can be either mild (typically French), or spicy (the Cajun version which is typically Mexican).
There are different forms in which Andouillette can be cooked and eaten. It can be eaten as a dish in itself. Pan-fried Andouillette is the primary form of eating Andouillette. However, you can also eat boiled, grilled and barbequed Andouillette.
Eat Andouillette individually or Complement with others:
Traditionally, served with sautéed potatoes and mustard sauce and complemented with wine, this is a filling dish it itself. However, you can also eat the Cajun version of Andouillette as part of other Cajun foods, such as, soups, stews and other meat dishes. Also, dry white wine, brut champagne and Pinot noir go best with this dish.
Technique of Eating Andouillette:
As far as the technique of eating Andouillette is concerned, it is quite simple too – provided you keep a few important points in mind. Use a knife and fork always to eat an Andouillette. Andouillette at times may have strong smells that may not be very pleasing. Therefore, make full use of the strong-flavored mustard sauce and the wine. The texture of an Andouillette is normally rougher than other sausages and therefore, you need to chew the morsels really well before you gulp them in. Andouillette can be served either hot or cold. But the overall techniques of eating it remain the same.
