Step 1: If you want to increase the shelf life of popcorns, the very first step is to let them dry in the field as long as possible. Corn is ready to harvest when the husks are completely dry and kernels become very hard. Remove the husks and corn after harvesting.
Step 2: Fill the corns in mesh bags and hang them in a warm, dry and well-ventilated area. This will allow the corn seeds to dry fast. If you have an open area where you get direct sunlight, spread it on a big piece of cloth away from moisture, and let it dry. Do not forget to cover it with a sheet of cotton cloth, in case you have bird problem in that area.
Step 3: Shell a few kernels to test whether or not the popcorns are ready for storage. If the kernels pop taste good, shell them off the cobs and fill them in re-sealable freezer bags or airtight containers. Protect it from rain or snow. Keep them in freezer until next use. If the kernels have not received enough warmth, they will be chewy and would taste inappropriate. This indicates that they need to be dried for a few more days.
Step 4: Stored popcorns do not have an indefinite shelf life. Use them within 30 months of storing them to have fresh corns every time you pop them.
Technical Tip: Popcorns must be protected from moisture in order to avoid significant fungal and microbial activity. Hence, store them at 14.5% moisture so that it doesn’t affect its popping volume too. Dry them 13.5-12.5% for long-term storage.
