How to Cook Steak Grill with Crisp Black Crust
When it comes to steak, it is better to not serve steak than serve a badly done steak. And if you are aiming for perfection, a steak with a crisp black crust, look no further.

What You Need
4 prime New York strip steaks
2 sticks unsalted butter
½ cup corn oil
Salt and black pepper
Step 1: Take the steaks out of the fridge about half an hour before you start cooking and let them come to room temperature.
Step 2: Melt the butter over a high flame, skim the solids that form on top and leave the butter to cool.
Step 3: Mix the oil and the melted butter on a serving plate and coat both sides of the steaks. Hold up the steaks so that the excess oil drips off.
Step 4: Spread salt and pepper on both sides. You can never go wrong with salt in a steak. The salt is what gives the steak an even better crust.
Step 5: Place the steaks where the grill is the hottest. The grill might flare up at times. In such a case, lift the steaks with a pair of tongs and move them to the outer edge of the grill. When the flame dies out, return them to the center of the grill. Take care not to drag the meat across the grill.
Step 6: A New York strip needs to be turned three times, cooking both sides twice for 4 minutes each time.
Step 7: Determine what kind of steak you want. If you want a rare steak with a crisp crust, move the steak to the outer edge of the grill. If you want a well done steak, leave it on the grill for another couple of minutes.
Step 8: Remove the steak from the grill.
Here are some tips on how to tell when your steak is done:
Cut a small slit in the meat and check the color. If the meat is red, then your steak is rare, if it is pink, your steak is medium done and if the steak is light pink in the center and white near the crust, you have a well done steak.
After you are done grilling, let the steak stand for 3-4 minutes. This allows the juices to settle in to the steak. Cut the steak into slices and serve on a platter.
