First thaw the pork if it is frozen. You can use your microwave or just leave the entire packet in a tub of cold water.
Take a good stainless steel pan, or if you prefer, a cast iron pan. Cast iron pans will give the chops that crusty exterior. Turn on the stove to medium-high and while the pan is getting heated, season the pork chops with salt and pepper. Add some oil to the pan after it has heated sufficiently.
Gently place the pork chops in the pan, and make sure the hot oil does not spatter.
Leave the chops to cook for about 3-5 minutes. After which the edges of the chops will begin to turn up, away from the pan surface. This is your cue to get the rosemary leaves.
Take some of the leaves in the palm of your hand and rub them over the chops. This helps bruise the spices and it makes the oils come out.
Now take a spatula or a pair of tongs (do not use a fork) and flip the pork chops. Repeat the same process and don’t forget the rosemary leaves once the edges begin to turn up.
Once the chops are done, take them out and place them on a warm plate.
You will notice that there are some bits of the chops and oil left on the pan. Add some water, or preferably, wine and scrape up the leftover bits, thus deglazing the pan and making a sauce.
The liquid will begin to boil and once it was boiled all the way add some butter to the pan and mix till it combines with the sauces in the pan.
Put the pork chops back in the pan as well as the juices that have run from the chops into the plate. Coat both sides of the chops in the sauce.
Your pork chops are ready. So, grab a knife and fork, and indulge in nature’s perfect food.
