Peel off the flaky skins. Trim the ends and separate the cloves.

- Wash in cold water and put them on kitchen towels to dry.
- Get a sheet of aluminum foil and place the garlic cloves on it.
- Season with salt, pepper, and olive oil. If desired balsamic vinegar can be added.
- Warp garlic on aluminum foil. Warp this packet in another aluminum foil piece to ensure that garlic does not get burned.
- Clean and preheat gas grill to medium-high temperature.
- Once hot, reduce heat to medium temperature and place garlic packets inside the grill. Make sure that they are not exposed to direct heat.
- Let cook for about 40 to 45 minutes. Keep changing position of garlic packets intermittently to facilitate even cooking.
- Garlic is ready when they become soft and attains a caramelized taste and texture.
- Open the packets to check for the same.
Alternately, garlic cloves and be threaded onto wooden skewers and then grilled.

- Store garlic cooked on the gas grill for up to 3 or 4 days in airtight zip-lock bags in refrigerator.
- If the heat is too high inside the grill, place garlic pouches on the top rack.
