Here are the steps:
• You will need ¼ cup kosher salt.
• ½ spoon allspice seasoning
• ¼ cup brown sugar
• 1 small cup vegetable stock
1 teaspoon black peppercorn
• Start the process by pouring ¼ cup water in a large pot.
• Use all the ingredients mentioned above and stir them well in the pot. These ingredients are going to give the chicken breasts their much delicious juicy taste.
• Put this solution in medium heat and keep stirring it continuously. It should start boiling.
• Remove it from the flame and let it cool to room temperature.
• Once the solution is cool you can put it inside your refrigerator. Let it be there for at least 6 hours.
• After six hours you can add some water or ice to the cold solution. This helps to create some more stock for the chicken breasts to submerge.
• You should submerge these breasts well.
• Keep the submerged chicken breasts for 3 hours in the refrigerator.
• You can add some seasoning for better taste. Add some rosemary and garlic to this. You shouldn’t add salt because the brine is already salty.
