Blanching almonds is a very simple culinary trick. For this, you need the following things:
Raw almonds; A Saucepan; A Spatula; A Strainer; Boiling water; Cold water

Method:

For blanching almonds, you need to buy skin-on almonds of a good quality.
Place the saucepan on flame and fill almost half of it with water. Bring the water to a boil.
Now, gently slide the almonds in the boiling water. Ensure that the all of them are submerged in the water.
Let them boil for about a minute. The timing is very important here. If the almonds are boiled for more than a minute, they might lose their crispiness and become soggy. Hence, ensure that they are not overcooked.
Once boiled, drain the almonds in a strainer. Rinse them immediately under cold water for some time. This dissipates the heat from the almonds as soon as possible.
Now, spread them in a single layer over some kitchen towels and pat dry. This will help absorb the extra water.
Start peeling the almonds. At this stage, peeling becomes a very easy task. The hot boiling water had already made the almond skin slipper. Hence, if you just place the almonds between your forefinger and thumb now and press slightly, the skin automatically comes off the nut.
Skin all the almonds in a similar way. Your blanched almonds are ready. You can also store them in Ziploc bags or boxes in the refrigerator for later use.

You can also blanch almonds in minutes in a microwave. For this, the overall procedure remains the same. Just keep in mind to use a microwave safe bowl for this. Also, if you are using, say about half a cup of raw almonds, add only a quarter cup of water to the cup. 

Blanched almonds not only enhance the flavor of your recipes greatly, they have great nutritional qualities in them too. They can effectively fight cholesterol, give you a healthy skin, remove dark circles from your eyes, fight hair fall problem and so on. If you learn the process of blanching almonds, you can save a lot of money for yourself too. Skin-on almonds are much cheaper than the blanched almonds that you get to buy from the markets.
