Bengalis have a strong liking for Hilsa fish. Fried Hilsa is a very popular food item in the majority of Bengali households. The crisp and mouthwatering fish preparation is easy to make and great to taste. The delicious aroma of fried Hilsa is a source of great delight for food lovers. The ingredients that are required to make this delightful fish preparation are as follows:

 

6 pieces of Hilsa, Turmeric paste, one teaspoonful of salt, and the required amount of oil needed for frying. 

 

The procedure for preparing fried Hilsa is given below:

 

The oil should be heated till a blue haze develops. In the period in-between, the Hilsa should be coated with turmeric paste and salt should be added to enhance the taste. The fish pieces should then be fried in hot oil till the time it develops crispness and the fish pieces develop a color that is predominantly brown (Care should be taken not to over fry the fish). The oil should subsequently be drained off and the fish served hot.
