Monterey, CA attracted over 150,000 spectators to the 2007 Moto-GP World Championship Race at Laguna Seca.  The biggest attraction other than fast bikes and incredible drivers from around the globe was the Leblon Caipirinha tent!  Chef Dory's innovative use of fresh fruit purees along with a pit crew larger than Australian winner Casey Stoner's made this tent the hot spot of the race!  Our personal favorite was the Ginger Peach Caipirinha, Saude!

Ginger Peach Caipirinha

For: 2007 MotoGP World Championship
Race A Laguna Seca

2 oz of Leblon
1 Fresh Peach, Pealed
1 Tsp of Fresh Ginger
1 oz Fresh Lime Juice
1 oz. Simple Syrup
1 Spring of Fresh Sage

Place Peach and Ginger in a Food Processor and Blend to Puree.

In a rocks glass, add Leblon Cachaca, Lime, Simple Syrup, Sage, Ice & Shake.

BTW - Cachaça is the most popular distilled alcoholic beverage in Brazil. Cachaça is denomination of origin, in other countries it is known as "aguardente", "aguardiente" or other names. Cachaça is only produced in Brazil. The average Brazilian drinks about three gallons (roughly twelve litres) of Cachaça annually. Cachaça is, "...the product of the distillation of fermented sugarcane juice, with its alcohol strength between 38% and 48% by volume. Up to six grams per liter of sugar may be added." It is sort of a fiery-earthy rum. Cachaça is often said to differ from rum in that it is made from sugarcane juice while rum is made from either molasses or sugarcane juice then aged in oak barrels. 1.3 billion liters of Cachaça are produced each year.
