Fried Eggs Sunny Side Up with a Perfect Crust

How to make a Fried eggs with really crispy crust
 
Ok, so my love of eggs is obvious (two previous posts, one on how to make egg with salmon and caramelized onions and two, how to make a toad in a hole give credence to that claim). I have had fried eggs like countless times.
I recall the most desperate time when a few of us made fried egg was way back in boarding school. My friend (you guys know him as the popular blogger/video producer on ifood, vikas and two other whacko buddies couldnt resist the animal urge to GRUB a fried egg. But at 4 am in our dorm room there was nothing to really fry the eggs with. So the egg-addicts decide to take out some hair oil and use a portable press (you the tiny ones you carry with you to iron clothes) and to fry the egg on the press. Can you imagine???  frying an egg as the iron heats up in some (sick) hair oil. What more can i say - being the savage egg eaters we are, we managed to satsify our urge (i must say the HAIR OIL was .... ugggggghhh)
 
As with growing up in life, maturing and developing finer tastes (some say getting finicky), my master chef/roomie M, taught me how to cook+eat (he will say savor) a nice fried egg (friends, are you listening - grow up - no more fried eggs on a press with hair oil). The secret to an awesome fried egg is the intense heat that makes the base really crusty and deep brown. So here from the master Chef M himself ( i am being a good apprentice and chronicler)
 
Step 1. Heat the iron cast pan and rub some butter (indian butter lovers, amul remains tough to beat even in the USA). let the pan get very hot before you rub the butter. The secret is in letting the IRON get HOT (ok no frivolous pun intended)

Step 2. Break your eggs and let the them get fried. Rub Some more butter as they cook.

Step 3. Keep cooking the eggs till the crust starts forming and the egg white becomes deep brown. The yolk will cook from the bottom up. Again the secret is to cook on medium heat but the pan should have been really hot when you add the butter and the eggs. You wont get the crust if you dont use a hot pan and try to cook on HIGH heat. That will burn the white.Your fried eggs are ready to eat.

My mouth is already watering just thinking about those awesome eggs and seeing the pictures.

Man! I remember those days. After a few (mostly successful) attempts at cooking the eggs on the iron, we realised that 1. the surface was small, hence we could only fry one egg at a time and we usually had quite a few (pretending to study hard at 3 a.m.) hungry souls, and 2. we wanted variety...wanted to move on to omlettes and scrambled eggs! So, we wiped clean the lid of a trunk...held the iron under the lid and before we knew it, a party was on! Ofcourse, to satisfy our midnight cravings, we replaced the 'almond drops' hair oil with cooking oil stolen from the school mess.

The picture's very tempting. I generally like it 'double fried' (thats what we call it in Mumbai), but I'll give this 'sunny side up with a crispy bottom' a try...and I'll replace the oil with butter... Keep posting more of your experiments.

I like to fry eggs in a small non-stick skillet (Circulon) in a little olive oil, then I turn the burner/gas down to the lowest, grind fresh sea salt asn pepper liberally over the egg, add a little hot water, cover, and cook until the yolk is partially cooked. I enjoy a fried egg on top of many things! Great protein. Shanti/Mary-Anne

I just love my eggs "Sunny Side Up". That's the only way I would have them. My mouths watering already. I cook eggs with oil, but I'll be giving butter a try for sure (especially if the end result is going to be so great) I'll skip the "almond drops hair oil" though :)
