National Pasta Day

Foodie fans today is National Pasta Day!  It's also Four Prunes Day...

Here's how I make my pasta...

2.25 cups flour
3 eggs
1 tbs olive oil
pinch salt
heap of love

pile the flour on a cutting board and make a well in the middle
crack in the eggs
add the oil and salt
scramble the eggs inside the well - once lightly scrambled start incorporating flour into the mixture from the sides of the well
mix well then knead with your hands once a fork doesn't work
knead for 10 minutes
wrap tightly in plastic wrap and stick in the fridge for 30 minutes
using small sections at a time put the floured dough through a pasta roller and flatten into nice sheets
cut the pasta and let dry for 20 or so minutes
boil in well salted water for 4-8 minutes

That's a lot of sandwiches! I would explode if I ate even a quarter of that... As for the Prunes and Pasta - Pitch the prunes and just eat the pasta! :) Nikko

We love making pasta-often with Andrew 10 and Tiffiny just turned 8 a few days ago. (Tiff is the one in the photo with moi). The kids love making pasta both the rolled and cut, and the extruder way. We have a Simac Extruder (small one like commercial machines) and it is really fun to crank out Angel Hair, etc. http://www.simac-pastamatic.co.uk/ BTW their gelato Machine is awesome as well. Have had both for 20 years and use often. o issues with either. Had a Cuisinart Pasat Machine and plastic dies cracked! Simac has bronze dies which make for clean extruding edges. Flavours are great and we use powdered Porcini, saffran, pesto, gatlic, black pepper, curry, Meyer Lemon and on and on. Fun! Baby foods like carrots, beets, or squash work, but I like the powders best. I dehydrate tomato slices (I know what a surprise) and grindthem into powders for adding to pasta dough and sauces. Reading about gnocchi and pasta is making me hungry this AM. Shanti/Mary-Anne
