Guacamole For Cinco De Mayo
The Tortilla Guy - is really funny and has some great ideas for using Tortilla's. Cinco de Mayo is May 5th for all of you non spanish speaking folks and Tumaro's Totillas would be great for a Traditional Mexican meal.
Also, Concord Foods has recently introduced an authentic Guacamole mix in a pouch which is really good. Just add two ripe avocodos to the mix and you have a wonderful Guacamole.

Cinco De Mayo is celebrated to remember the defeat of the French army over the Mexican militia in the battle of Puebla. It is not Mexican independence day, that is on the the 16th of September.
