The 6 schools of Chinese Cuisine vary greatly from the mild, and often bland to my palate of Cantonese cuisine to the fiery, but often oily Schezwan and Hunan cuisines with much in between.
My favourite Chinese cuisine is Indo-Chinese or Desi Chinese Indian dishes. They encompass the techniques and recipes of China executed utilizing the plethora of Indian spices an ingredients which results in exciting flavours and sensations.
Popular dishes are Manchurian Gobi or Chicken, but I especially love such as Murgh Roghni-a paprika-pomegrante almond sauce chicken, Batak Sya Chum (a duck curry) and Haka Chow (Indianized).
