CHICKEN MARENGO,
INGREDIENTS;-
1 boiler chicken[skined and cut into pieces] ,
4 teaspoons,refined flour[maida],
1 tsp.chilli powder,
1/2 tsp. musterd powder,
1 tsp.pepper, salt to taste,oil as needed,
4 large tomatoes,
3 mushrooms[optional],
3 rasher bacon,
1 pod garlic[fullsise],
1 bunch spring onions, salt and sugar to taste.
Roll wet chicken pieces in flour mixed with chillipowder, mustard,pepper and salt. fry in smoking hot oil for a few minutes. put in pressure cooker with two cups water and cook till tender and done. keep aside.
Halve tomatoes and boil in a little water. strain out juice, discarding skin and seeds. fry sliced mushrooms and bacon separately. remove, fry chopped garlic and onions in the same oil. add chicken with gravy, mushrooms, bacon and tomato puree. simmer and ckeck seasoning. serve hot with crusty bread.
