My name is Belucci and I am an Italian Australian chef based in Melbourne. ‘It gives me great pleasure to create my passionate food for you to enjoy. I have dedicated thirty five plus years to the industry in Australia and Europe cooking and teaching and I started this website to share my personal recipes with you. Most of my meals are based on Signature cooking and methods used are as ancient as the Romans. Curing, marinating wet and dry ageing (specially the steaks) results in tasty and flavorsome meals without use of any fats, lard, rich stocks and sauces. The core flavours and taste are extracted from the ingredients and not added unless being infused with herbs or spices. The result is a meal which is delicious, healthy and sumptuous. The integral and essential ingredients used in my cooking are fresh herbs, extra virgin olive oil, lemon, lime, wine, jus, salt and pepper. This is a typical Tuscan way of cooking.
